Cookie bites

so tasty you’ll think they’re cookies …cookie bites

Ingredients (yields 12-15 cookie bites):
Chocolate Almond Cookie Bites

1 1/4 c gluten free oats
1 c raisins
1/2 c dairy free chocolate chips
1/2 c almond butter
1/4 c chia seeds
1/4 c coconut flakes
1 tsp cinnamon

Cinnamon Raisin Cookie Bites
1 1/4 c gluten free oats
1 c raisins
1/2 c sunbutter
2 tsp cinnamon

Steps: 
1. Place all ingredients in food processor
2. Pulse until mixed well and crumbly like coarse sand
3. Run food processor and add 3 TBS boiling water while running food processor. Mixture should form a ball.
4. Use hands to form small balls of batter (about 2 TBS per ball). Chill for 1-2 hours.

Note: If batter is too sticky to form balls, run food processor and add 1 TBS gluten free oats at a time until mixture forms ball and can be rolled.
