Mediterranean Salad

A simple side dish chock full of veggies

Ingredients (serves 2): 
1 pint organic grape tomatoes
1 avocado, pitted
1 organic cucumber
1/2 lemon
Extra virgin olive oil
Pink Himalayan Salt
Fresh black pepper
Jane’s Original Krazy (optional)

Steps: 
Halve the grape tomatoes. Dice the avocado and the cucumber. Place all veggies in a bowl. Squeeze juice of the 1/2 lemon. Drizzle 1 TBS olive oil. Sprinkle with pink salt and fresh pepper. Toss well and enjoy! Sometimes we had a dash or two of Krazy Jane’s (our nickname for the all natural seasoning mix) but this is optional.
