Crunchy Slaw

_1362362284Delicious on top of Slow Cooker Pulled Pork

Ingredients (serves 8-10): 
1 head napa cabbage, sliced thin (or a bag of shredded cabbage)
1/4 red onion, minced
1 sweet apple, sliced into thin strips with veggie peeler
2 medium carrots, sliced into thin strips with veggie peeler1/3 C olive oil
1/3 C unfiltered apple cider vinegar
1/2 small lemon, juiced
3 TBS honey
1 tsp celery seeds
sea salt & pepper (~1/4 tsp each)

Whisk all dressing ingredients*. Put all veggies  dressing in a big bowl with a tight cover. Shake well to mix dressing & veggies super well. Put in fridge to marinate for 15-20 minutes.Use a strained scoop of crunchy slaw atop Slow Cooker Pulled Pork. Delish!

*Taste dressing. If too sweet, add more vinegar & olive oil 1 TBS at a time. If not sweet enough, add more honey 1 tsp at a time.
