Decadent Dairy-Free Mac-N-Cheese
For those of us who love creamy man-n-cheese, but without all the bloating & gas…
Ingredients (serves 4):
1 avocado, pitted
1 1/2 C broccoli
1 heaping handful basil or flat leaf parsley (or 1 C)
3-4 garlic cloves
1/2 C pine nuts
2 TBS lemon juice (about 1/2 lemon)
1/2 C olive oil
sea salt & pepper
1 PKG whole grain penne pasta (I like Tinkyada’s brown rice penne)
1. Rinse, chop & steam broccoli (until relatively soft).
2. Cook pasta, rinse with warm water, drain & add back to hot pan. Toss with 1 tsp olive oil.
3. In a food processor, blend all ingredients (except pasta) until smooth. Taste. Add more sea salt, pepper or lemon juice, if desired.
4. In large bowl, mix pasta & creamy green sauce. Serve warm!
