Pumpkin-Spiced Quinoa Bowl

A fresh take on hot breakfast…

Ingredients (serves 2): 
1 C dried quinoa (pre-rinsed if required)
1/4 C organic raisins (I prefer golden, but you can use regular)
1/4 C pepitas (or pumpkin seeds)
1-2 tsp pumpkin pie spice (or use 1 1/2 tsp cinnamon & 1/2 tsp nutmeg)
Optional: 
1/2 C unsweetened almond milk
1 TBS natural liquid sweetener (maple syrup or honey)
Steps: 
Cook quinoa as directed (it should take 12 minutes or less). Remove from heat. Drizzle liquid sweetener all over quinoa. Add remaining ingredients and toss well to combine. (Use a fork if possible so you can fluff the quinoa and avoid squishing it).Serve warm alone, or top with 1/4 C almond milk.
