Simply Delish Mini Banana Pancakes

So light & tasty they barely make it to the table!


Ingredients (serves 2): 
2 Omega-3 eggs
1 banana
2 TBS ground flaxseed
2 TBS ground almonds (or any other nut flour)
1/2 tsp vanilla extract (gluten free)
1 tsp cinnamon
coconut oil, for pan frying
pure maple syrup, for dipping
Whisk all ingredients together super well. On low to med heat, coat saute pan with dab of coconut oil.  Once pan is hot, drop 1 heaping TBS of mixture per cake. Add chocolate chips or blueberries to top. (Flip when bubbles form to cook both sides). Serve hot with drizzle of pure maple syrup!
