Chocolatey Strawberry Smoothie

As a busy mom, I love smoothies! They are seriously my go to meal almost daily in the summer. Though the internet will have you believe that smoothies are easy peasy, in my experience they are absolutely not foolproof. There have been plenty of times that I whip up what I think is a simple smoothie – fruit, plant-based milk and protein powder  – only to have my kids turn their noses up at it.

I have lots of smoothie recipes but this one is pretty yummy. The combination of chocolate + strawberries + honey makes for for quite the yummy treat. I add hazelnut butter as protein because I love the delicate flavor of hazelnuts that combine so nicely with the chocolate. I mean hello – homemade nutella – is to die for.

Spinach  is truly optional. Some people can’t tolerate the oxalates in spinach (that’s me) but others do just  fine with the delicate leafy green. You do you. I like adding it for my kids because it’s pretty rare that they raise their hands for greens. Fortunately, they don’t mind it in a smoothie or a green juice and thus this recipe is one of my favorite ways to add extra greens into my family’s diet!

Chocolately Strawberry Smoothie

Ingredients (serves 1):

4 frozen strawberries
2 TBS chocolate hazelnut butter
1 C coconut milk (unsweetened)
1/2 C frozen chopped spinach
1 tsp organic raw honey
1 C filtered water

Directions:

1. Put all ingredients in a blender. Blend until smooth.
2. Taste. If you prefer a more liquid, thinner smoothie, add more water (1/4 C at a time) and
blend again.
