Maybe I’m a dorky health nut, but I love kale season! When the crisp fall air rolls in all I think about is the abundance of kale arriving in my CSA box. Kale wasn’t something we ate growing up. We obviously missed the nutrition message in those reruns of Popeye because leafy greens just weren’t ever on the regular menu. Then again, I’m not sure I know anyone that had lots of kale as a kid, do you?
I wasn’t introduced to this green leafy gem until maybe 7-8 years ago. But, ever since I’ve been in love. Kale is packed with fiber, plus it’s high in iron, calcium, vitamin C, A and K. You see? It’s a powerhouse of nutrition and not just a trendy food like low-fat cheese that we’ll grow out of (sorry, mom).
If you aren’t a kale lover yet, have no fear! It’s simple to add kale to your existing family meals. Simple wash, de-stem (hold and slide your hand down the step while pulling the leaf off) and chop into ribbons. Then add kale to your favorite soups or saute with olive oil and minced garlic for a flavorful side dish!
